Spaghetti Carbonara

400 g spaghetti
1 tbsp olive oil
250 g Orava bacon
4 egg yolks
100 g Volovec cheese
ground black pepper


Procedure

Cook the spaghetti in salted boiling water.

In a larger pan, heat the oil and add diced bacon. Fry until pink.

Meanwhile, in a large bowl, mix the egg yolks with half of the finely grated Parmesan cheese.

Transfer the bacon to a kitchen towel to remove excess fat. Set aside.


Reserve about 3 dl of the pasta cooking water and drain the spaghetti. Add the hot pasta to the egg yolk sauce and mix immediately so the hot spaghetti is well coated. If the sauce and cheese do not cover all the pasta, add a few tablespoons of the pasta water. Add the bacon, the remaining Parmesan, pepper, and mix well again.
