LIGHT SPONGE CAKE
2 eggs
60 g sugar
20 g melted SABI butter
1 tsp vanilla sugar
a pinch of salt
70 g plain flour
TOP POPPY SEED BATTER

100 g sugar
250 g white SABI yogurt
70 ml oil
zest of ½ lemon
170 g plain flour
80 g ground poppy seeds
2 tsp baking powder
¼ tsp baking soda
a pinch of salt
200 – 250 g cherries
Instructions
1. Line a rectangular pan (25 x 10 cm) with baking paper and preheat the oven to 180 °C.
2. Light sponge cake: beat eggs, sugar, vanilla, and salt for 3–4 minutes until fluffy. Gently fold in sifted flour and finally add melted butter. Pour the batter into the prepared pan and pre-bake for 10 minutes.
3. Poppy seed batter: whisk yogurt, eggs, sugar, oil, and lemon zest in a bowl. In another bowl, mix flour, poppy seeds, baking powder, baking soda, and salt. Add dry ingredients to wet and briefly combine with a spoon. Fold in half of the drained cherries.
4. Pour the poppy seed batter over the pre-baked sponge, level the surface, and sprinkle with remaining cherries. Bake for another 35–45 minutes.
5. Let the cake rest in the pan for 10 minutes, then remove and cool completely on a rack. Cut only after cooling.
