Curd Cheese Cake with Cranberries

500 g SABI curd cheese
100 g sugar (or honey)
3 pcs eggs
150 ml SABI milk
100 g cranberries (dried or fresh)
100 g plain flour
1 tsp baking powder
1 tsp vanilla extract
50 g melted SABI butter
pinch of salt
lemon zest for flavor enhancement


Instructions

1. Prepare a baking pan, grease it with butter or use parchment paper.

2. In a bowl, beat eggs with sugar until foamy. Add curd cheese, milk, melted butter, and vanilla extract. Mix well.

3. In another bowl, mix flour, baking powder, and salt. Gradually fold dry ingredients into the curd mixture to form a smooth, slightly liquid batter.

4. If using dried cranberries, soak them in hot water for 10 minutes and drain. If using fresh cranberries, you can lightly coat them with sugar before mixing into the batter. Gently fold cranberries into the batter.

5. Pour batter into the prepared pan and bake for 35-40 minutes at 180°C, or until the surface is golden and the center is firm (check with a skewer).

6. Let the cake cool. You can dust with powdered sugar or serve with a spoonful of whipped cream or yogurt.
