2 l SABI semi-skimmed milk
30 eggs

For seasoning

Salt, black pepper, a little sugar, optionally a little vegeta, red paprika (just for coloring), herbs


Procedure

Break the eggs into the milk and whisk well. Add salt and black pepper (and red paprika to taste).
Cook while stirring constantly until curds form. It looks like the milk has curdled, but this is correct.

Immediately drain and strain through gauze or another thin cloth placed over a colander. Let the cheese drain, ideally hanging somewhere, until all excess liquid drains and family members don’t consume it earlier.
