In the beautiful surroundings of the Volovské Hills, we talked about bryndza with MVDr. Tatiana Andrašková, production director of the Kluknava dairy.
Tell us about the summer bryndza produced by you. Our bryndza is made traditionally by processing sheep curd cheese (100% sheep milk). We collect sheep milk from mountain pastures in the Spiš and Šariš regions based on contracts with individual pastures. Collections are regular, and we have a schedule starting from spring until autumn. The milk is then processed at our dairy, and the sheep curd brought from the pastures is processed in a separate facility.
What makes it special?
The sheep curd cheese, which is the basis for good bryndza, is made from unpasteurized sheep milk and undergoes a fermentation process for at least 10 days. The acidic environment kills any viruses, as confirmed by microbiological analyses. There are no harmful bacteria, viruses, or pathogens. On the contrary, in the bryndza we talk about, there are up to 1 billion live probiotic bacteria per gram, which is at least a hundred times more than in live yogurts, which are very important for the human body. This is the essence of "live bryndza," which people don't even know about. This must be emphasized – that live bryndza is the traditional, the real one, the one with literally healing effects. Within the EU, no other food has such a composition containing so many types of bacteria needed for the human body. This is the only product. So that's why this bryndza is alive.

People just don't know it; for the average person, bryndza is bryndza, whether Slovak or Polish, notice that everyone writes bryndza. We produce bryndza from live cheese. The beneficial effects of such bryndza have been observed in patients with various diseases.
Patients then send us letters full of gratitude and emotions, for example, we received a letter that said: "I live thanks to your bryndza. Doctors said I wouldn't live a year, but I have lived ten years, and every morning I eat a piece of your bryndza." These are the findings. Doctors observed a positive effect on patients in hospitals, not only on digestion but also on blood pressure, diabetes, bone thinning, vascular diseases, etc. Bryndza contains bacteria needed for the digestive system's microflora – the intestines, and the state of our microflora also affects the body's immunity and thus health.
