Ingredients
3 pcs eggs
1/2 cup cane sugar
1/2 cup SABI acidophilus milk
80 ml melted coconut oil
1 and 1/2 cups all-purpose flour
2 tsp baking powder
1 cup grated coconut
1 can pineapple compote
Cream topping:
1 SABI sour cream
1 to 2 packets vanilla sugar
Procedure
1. In a bowl, whisk eggs with sugar. Add SABI acidophilus milk, melted coconut oil, and mix.
2. Add grated coconut and flour mixed with baking powder to the batter. Mix everything together so the ingredients combine and pour the batter onto a smaller baking tray (40x30cm) lined with baking paper.
3. Arrange the canned pineapple densely on the batter, press it into the batter, and bake the cake for 20 minutes at 175°C.
4. While the cake is baking, prepare the cream topping from sour cream and vanilla sugar.
5. Let the baked cake cool and then spread the cream topping over it. Finally, you can decorate the cake with pieces of coconut or dried raspberries.
Tip from Karotka
You can substitute pineapple with seasonal fruit, for example, strawberries.
