Vanilla Crescents

250 g plain flour
200 g SABI butter (cold, cubed)
100 g ground almonds or walnuts
80 g powdered sugar
1 pc vanilla sugar
pinch of salt

For coating:

100 g powdered sugar
2 packs vanilla sugar


Instructions

1. In a bowl, mix flour, ground almonds, powdered sugar, vanilla sugar, and salt. Add cold butter and knead by hand or with a dough hook until smooth and compact. Wrap in cling film and chill for at least 1 hour.

2. Divide dough into smaller portions. Roll each into a long cylinder about 1 cm in diameter and cut into equal pieces (about 5 cm). Shape crescents from pieces and place on a baking tray lined with parchment paper.

3. Bake in a preheated oven at 175 °C (top and bottom heat) for about 10–12 minutes until lightly browned. Avoid overbaking.

4. Mix powdered sugar with vanilla sugar. While still warm, gently coat crescents in this mixture. If too fragile, dust with sugar through a sieve.

5. Let crescents cool and store in an airtight container. They become even more tender and delicious after a few days.
