Ingredients
3 - 4 egg yolks, 1.5 packets vanilla sugar, 1 tbsp plain flour, 150 - 200 g powdered sugar, foam from 4 - 6 egg whites, 1 tbsp rum
Procedure
Bring milk with vanilla sugar to a boil. Whip egg whites to stiff peaks and fold in a spoonful of sugar and half a packet of vanilla sugar. Using a small round ladle rinsed in cold water, scoop the foam, round it with a knife and place it into the hot milk which must not boil. Place further foam mounds spaced apart. Let them soak in the hot milk for 3 - 4 minutes, turning on both sides. Remove the finished balls onto a sieve and let cool. Into the milk in which the balls were cooked, pour in beaten yolks with sugar, remaining vanilla sugar and plain flour diluted slightly with milk. Pour the mixture into hot milk and cook while stirring until smooth cream forms. Pour the cooled cream into a bowl, place the foam balls on top, decorate and serve.
