Curd cheesecake according to SABI

250 g cocoa cookies with vanilla filling (or OREO cookies)
125 g SABI butter

Filling:

100 g cocoa cookies with vanilla filling (or OREO cookies)
250 g mascarpone
250 ml SABI whipping cream
250 g SABI curd filling

2 pcs vanilla sugar
5 tbsp powdered sugar
100 g cocoa cookies with vanilla filling (or OREO cookies)
Frozen fruit to taste


Procedure

Separate cocoa cookies from vanilla cream and reserve cream for filling. Crush cookies into small pieces and mix with melted SABI butter.

Prepare a cake pan lined with aluminum foil. Press cookie mixture firmly into the bottom to form a uniform base. Prepare filling by mixing mascarpone, SABI curd filling, reserved cookie cream, powdered and vanilla sugar.

Whip SABI cream and gently fold into filling. Break cookies for filling into smaller pieces. Spread 1/3 of cream on base, sprinkle half of the cookies, repeat with cream and remaining cookies.

Spread last third of cream on top and chill in refrigerator for at least 4 hours. Before serving, decorate with broken cookies and frozen fruit as desired.

TIP: You can also decorate with cocoa or Granko powder.
