“Sabinovský Balkan” together with “SABI hrudka” represent SABI fresh non-ripening natural soft cheeses. These two curd full-fat cheeses are very similar in texture and taste. The difference is mainly in saltiness, as Sabinovský cheese of the Balkan type undergoes a special cure in salty brine to achieve the final salty effect typical for Balkan cheeses.
“These cheeses are made by sweet coagulation of milk using natural rennet and subsequent ripening under optimal conditions. Their delicate taste stands out in both cold and warm cuisine. Our Balkan cheese, as well as hrudka, are suitable for regular consumption because they contain, besides dairy cultures, also the significant probiotic culture Lactobacillus casei, a good bacterium that improves our digestion.
