Raw Meat Patties with a "Melting" Center

500 g Sabinovská Tehla 30%
2 pcs medium-sized cooked potatoes
2 pcs eggs
2–3 tbsp plain flour
4–6 tbsp breadcrumbs
2 tbsp chopped chives or parsley
½ tsp sweet paprika
salt and ground black pepper
breadcrumbs for coating
oil for frying


Instructions

1. Coarsely grate 300 g of Sabinovská Tehla into a bowl, add finely grated potatoes, eggs, flour, 4 tbsp breadcrumbs, herbs, paprika, pepper, and lightly salt. Mix and let stand for 5–10 minutes to allow the breadcrumbs to absorb moisture.

2. Cut 200 g of Sabinovská Tehla into cubes (about 1 cm x 1 cm). Divide the cheese-potato dough into 12-15 equal parts, form patties, place a cube of cheese in the center, and wrap it with dough (to prevent the cheese from leaking). Shape into a patty and coat with breadcrumbs.

3. Fry the patties in hot oil for 2–3 minutes on each side and drain on paper, or bake in the oven at 200 °C.

4. Serve the patties with mashed potatoes and SABI yogurt tartar sauce.
