1 kg cooked potatoes in skin
250 – 350 g spelt coarse flour
200 g fresh leaf spinach
1 egg
3 garlic cloves
125 g bryndza
200 g SABI white yogurt
salt
ground white pepper
Procedure
Peel cooked potatoes and grate coarsely. Chop spinach and blanch in a little hot water. On a floured surface, mix grated potatoes with egg, crushed garlic, spinach, flour, and knead into non-sticky dough. Divide dough into 2 parts. Roll each into a cylinder and cut into about 1 cm strips to form dumplings. Cook dumplings in boiling salted water until they float, then drain. Prepare bryndza mixed with yogurt, salt, and pepper and pour over cooked dumplings.
