DOUGH:
300 g semi-coarse flour
20 g yeast
1 pc egg
1 tsp sugar
150 ml SABI milk
TOPPING MIX:
250 g bryndza (sheep cheese)
200 g Sabinovská white curd cheese
250 ml SABI sour cream
200 g Orava bacon
2 pcs onions
1 pc dill (or 3-4 tsp dried dill)
Procedure
1. First, prepare the yeast starter. Crumble yeast into a little milk with 1 tsp sugar and let rest.
2. Meanwhile, fry chopped onion in oil and in another pan fry the bacon.
3. In a large bowl, combine flour, egg, and starter. Knead the dough well, add salt and some ground caraway. Use the rendered bacon fat and onion oil as fat. Add some cracklings and cover to let rise.
4. While the dough rises, prepare the topping. Mix SABI sour cream, bryndza, and grated curd cheese into a uniform mass.
5. Stretch the risen dough by hand onto a greased baking tray and spread the bryndza topping. Sprinkle with onions, cracklings, and chopped dill.
6. Bake in a preheated oven at 180°C for about 30 minutes.
