CRUST:
500 g soft spreadable SABI curd cheese
1 SABI sour cream
1 egg
1 tbsp golden syrup
2 vanilla sugars
powdered sugar to taste
FILLING:
130 g butter cookies
125 g SABI butter
1 tbsp rum
TOPPING:
250 g frozen fresh currants
sugar to taste
1 tbsp water
Procedure
Crust: Crumble cookies in a mixer, pour melted butter over, and press the mixture into a cake pan lined with baking paper. Drizzle with rum. Bake for 10 minutes and let cool.
Cream: Mix curd cheese with sour cream, add egg, golden syrup, vanilla sugar, and powdered sugar to taste. Mix well. Spread the cream on the crust and bake for 50 minutes at 180°C.
Topping: Cook frozen or fresh currants with sugar and 1 tbsp water, then strain the currants. Pour the mixture over the cheesecake and let set.
