SABI Homemade Bagels

700 g plain flour
15 g salt
1 cube fresh yeast
400 ml warm water
1 tbsp granulated sugar
1 pc baking powder
35 g soft SABI butter
1 pc egg white for brushing
various seeds for sprinkling (sesame, poppy, flax, etc.)


Procedure

1. Sift the flour and mix with salt. Dissolve yeast in a little water and mix with a spoonful of sugar until the sugar dissolves. Then mix the flour with the dissolved yeast, remaining water, and softened SABI butter. Knead a soft and slightly sticky dough by hand.

2. Sprinkle the dough loaf with flour, cover with a clean cloth, and let rise in a warm place for about half an hour. Then knead the dough again, brush with a little oil, and wrap in cling film (or place in a larger plastic container with a lid). Let the dough rest overnight in the fridge.

3. The next day, divide the dough into 10 equal pieces, shape into balls, and make a hole in the center. Twist and stretch the dough in your palm to form rings. Sprinkle with flour, cover with a cloth, and let rise for about 45 minutes.

4. Bring water to a boil in a pot, mix with a spoonful of granulated sugar and 1 packet of baking powder. Boil the risen bagels in the boiling water for 1 minute on each side. Remove, drain, and place on a baking tray lined with parchment paper. Finally, brush with egg white and sprinkle with seeds.

5. Bake for 25-30 minutes in a preheated oven at 250°C. Serve, for example, savory with Delicious SABI spread, vegetables, or ham.
