Ingredients
180 g SABI Cottage Cheese
200 g SABI Cream Cheese Spread
125 g SABI Plain Yogurt
3 tbsp sweetener (honey or cane sugar)
2 pcs eggs
1/4 tsp vanilla
2 tbsp vanilla pudding powder
150 g strawberries
TOPPING
100 g dark chocolate
2 tsp coconut oil
Instructions
1. Blend 40 g of strawberries.
2. Blend cottage cheese, cream cheese spread, yogurt, eggs, sweetener, vanilla, and pudding powder until smooth.
3. Pour the mixture into a smaller round baking dish or a tight form (21 cm diameter).
4. Pour the strawberry puree on top and create a zig-zag pattern with a skewer.
5. Bake at 170 °C for about 30–35 minutes.
6. Let the cake cool to room temperature.
7. Melt the chocolate with coconut oil and pour it over the cake.
8. Let it set in the refrigerator and decorate with fresh strawberries before serving.
TIP FROM KAROTKA: If you like a crunchy crust, you can add crushed butter cookies mixed with melted butter to the bottom of the form.
