Ingredients
BUTTERY DOUGH
1 cup all-purpose flour
1 cup spelt flour
175 g SABI butter
50 g cane sugar
1 piece egg
4 g salt
CURD LAYER
500 g lumpy SABI curd
150 g white SABI yogurt
1 tsp lemon zest
1 piece egg
1 piece vanilla sugar
3 tbsp cane sugar
CRUMBLE
3 tbsp cane sugar
4 tbsp semi-coarse flour
3 tbsp oat flakes
50 g SABI butter
10 - 12 pieces plums
Procedure
1. Mix flour, sugar, salt, butter, and egg and knead a smooth dough. Wrap the finished dough in foil and let it rest in the fridge for at least 30 minutes.
2. Roll out the chilled dough or press it with your hands onto the bottom of a round baking pan. Bake the crust in an oven preheated to 180 °C for about 10 minutes.
3. Mix curd with yogurt, egg, vanilla sugar, cane sugar (or honey), and lemon zest. Spread the mixture evenly over the pre-baked dough.
4. Arrange plum slices cut into crescents on the curd layer.
5. Using your fingers, mix butter, flour, flakes, and sugar to make the crumble and sprinkle it evenly over the fruit.
6. Place the cake in a preheated oven at 170 °C and bake for about 40 minutes until the surface is nicely browned and crispy. Let it cool slightly and serve.
TIP FROM KAROTKA: You can also use other seasonal fruits, such as pears or apples.
