Dough:
4 egg yolks
300 g powdered sugar
150 ml water
150 ml oil
200 g semi-coarse flour
1/2 packet baking powder
1 tbsp cocoa
4 egg whites
Cream:
4 whipped creams
3 chocolates
currant jam for spreading
cocoa for dusting
Instructions
Prepare the cream a day in advance. Cook whipped cream with chocolate, let cool, and refrigerate overnight. The next day, whip the cooled mixture into a smooth cream. Mix dough ingredients together and gently fold in the egg white foam. Pour the batter evenly onto a baking tray lined with parchment paper. Bake in a preheated oven at 180 °C for 25 minutes. Spread the baked cake with currant jam and then with whipped cream. Dust the surface with sifted cocoa and chill.
