Dough:

600g plain flour
300g Palmarin
200g powdered sugar
250g ground walnuts
1 egg
1/2 baking powder

Filling:

4 egg yolks
200g powdered sugar
250g Sabi butter
vanilla sugar


Procedure

Mix all ingredients together (preferably by hand). Knead a smooth dough. Dust walnut molds with flour and fill with the prepared mixture. Leave a hollow in the dough for the filling. Bake until golden brown. Let cool and join the halves with filling to form whole walnuts. Roll in powdered sugar or sprinkle with it. Best after resting 2 - 3 days.


Filling preparation:
Whisk yolks and sugar over steam until thickened. Whip butter and gradually mix in the cooled mixture. The filling is pale yellow.
