Procedure
Put flour, sugar, and salt in a bowl and mix with a spoon. Then add oil, egg whites, SABI plain yogurt, and the risen yeast starter made from 3 dl SABI 3.5% milk + yeast + 1 tsp sugar. Add the remaining 1.5-1.75 dl SABI milk gradually while kneading the dough. Knead a semi-soft dough that should separate from the bowl. Finally, knead briefly into a loaf using a little flour and dust with flour. Cover and let rise in a warm place for about 1 hour.
While the dough rises, prepare the filling. Weigh 200 g walnuts and grind them. In another bowl, mix 2 dl powdered and 2 dl granulated sugar, 3 tbsp cocoa, and vanilla sugar. Mix everything with the walnuts. Finally, prepare about half of the SABI butter needed.
Turn the risen dough onto a lightly floured board, form a roll, and cut into equal pieces (about 22-23). Knead each piece again into a small loaf. Do not let the loaves rise again but work with them immediately.
Flatten the loaf, first add a piece of SABI butter, then at least 2 tbsp filling. Close the loaf like a bun and place it closed side down on a baking tray lined with paper. Brush the top with egg yolk mixed with a few drops of water and bake in a preheated oven at 180 °C for about 20 minutes.
