Sabina is a popular processed cheese from the production of Milk-Agro. It is made 100 percent from Slovak milk in a Slovak plant.

During melting, the product is heated to 72–82 °C, a temperature at which proteins are not yet degraded but sufficient to eliminate undesirable microorganisms. Of course, this also destroys live, health-beneficial bacteria but significantly extends the product's shelf life.
The melting temperature of a specific product depends on the type of melting salt used. The main function of melting salts is to melt the cheese. Subsequently, they affect spreadability in the cooled product. Without them, the heated mixture of cheese, curd, and butter would have a rubbery and non-spreadable structure after cooling. A side effect is that melting salts increase the product's shelf life without adding preservatives.
