Procedure
Make a light roux from butter and flour. Dilute it with cold milk and bring to a boil while stirring constantly. Cook until the sauce is smooth and free of lumps. Season to taste and serve with roasted meat or as a basic sauce that can be flavored or supplemented with various other ingredients.
