Spring Acidophilus Cake with Rhubarb

300 g rhubarb (stalks cut into smaller pieces)
2 tbsp honey or sugar
1 tsp cinnamon
250 ml SABI acidophilus milk
250 g plain flour
100 g cane sugar
80 ml oil
2 pcs eggs
1 packet baking powder
½ tsp baking soda
1 tsp vanilla sugar
pinch of salt


Procedure

1. Mix chopped rhubarb with honey (or sugar) and cinnamon. Let rest for 10 minutes to release juice.

2. In a bowl, mix flour, sugar, salt, baking powder, baking soda, and vanilla sugar. In another bowl, whip eggs with oil and acidophilus milk. Gradually fold the wet ingredients into the dry with a spoon to form a smooth batter.

3. Pour the batter into a greased pan (approx. 24 cm diameter) and evenly sprinkle with rhubarb. Bake in a preheated oven at 180°C for about 35–40 minutes until golden.

4. After cooling, optionally dust with powdered sugar or serve with whipped cream.
