Pea Risotto with Salmon

This time, Majka has a tip for a delicious Pea Risotto with Salmon, which is a rich source of protein and Omega 3 fatty acids. Include legumes and fish in your diet and feel fit not only in January.

Ingredients

2 salmon fillets
20 g SABI butter
salt, pepper, lemon
1 small onion
olive oil
1 cup risotto or round grain rice
1 dcl white wine
1.5 l broth or water for pouring
1.5 cups frozen peas
50 g SABI butter
80 g hard Volovec cheese

Preparation

1. Cook the peas. Remove a quarter of them and puree the rest. Heat the broth in a pot, which will be used to pour the risotto (if you don't have broth, you can use bio bouillon or just water).

2. Chop the onion finely and sauté in olive oil until translucent. Add chopped garlic and fry for another minute. Add rice to the sautéed onion and garlic, lightly fry it, and pour in the white wine. Stir continuously until the wine evaporates.

3. Add a ladle of broth, stir until absorbed, then add another ladle. Continue this until the rice is soft (but not fully cooked) - about 15 minutes.

4. Then add the pureed peas to the rice and, if necessary, add more broth. Add SABI butter, grated Volovec cheese, and mix. Finally, add the remaining peas and mix.

5. Wash the salmon, salt it, and fry in a pan with heated SABI butter skin-side down for 8 minutes. Then turn the salmon and fry for another 5 minutes until golden. Salt and pepper the salmon, drizzle with lemon, and serve with warm risotto.
