0.5 kg plain flour T650
190 g powdered sugar
125 g SABI butter
125 g honey
3 eggs
1.5 tsp gingerbread spice
1 tsp baking soda
egg for brushing after baking
Instructions
Mix all ingredients together. It takes a bit longer to knead a good dough. Place it in a plastic bag and refrigerate for at least 24 hours; it’s fine if it stays longer.
At least 1 hour before baking, take the dough out and gradually take as much as needed for rolling. The rolled dough should be about 5 mm thick.
Cut out various shapes with cookie cutters. Place cut gingerbread cookies on a greased baking sheet and bake at 180°C for about 5 minutes until golden. While still hot, brush with beaten egg and let rest.
