FIT Pasta with spinach pesto and Sabinovská hrudka

500 g whole grain pasta
200 g green beans (frozen or fresh)
300 g Sabinovská hrudka SABI (you can also use SABI Balkan-type cheese)
a little olive oil
to taste salt + ground black pepper

 

For spinach pesto

3 tbsp olive oil
80 g baby spinach
40 g cashew nuts
2 cloves garlic
1 tbsp lemon juice
1/2 tsp salt
1/4 tsp ground black pepper


Procedure

1. Cook whole grain pasta in boiling salted water until tender. Remove Sabinovská hrudka from packaging and pat dry with paper towel. Cut into small cubes. Heat a little olive oil in a pan and fry the cubes until golden, seasoning with salt and pepper. Add green beans and sauté briefly together. Remove from heat.

2. In a powerful blender or chopper, blend all pesto ingredients until smooth. If too thick, add 1-2 tbsp water.

3. Drain cooked pasta and mix with prepared pesto, fried Sabinovská hrudka, and green beans.
