Easter Cottage Cheese Pastries

Ingredients

250 g of lumpy SABI cottage cheese
260 g of plain flour
250 g of SABI butter
1 piece of egg
2 tsp of salt
+ 1 egg for brushing
+ grated cheese or caraway seeds to taste

Instructions

1. In a bowl, mix the flour with salt, add the cottage cheese, butter, and egg. Knead a smooth dough and let it rest in the refrigerator for at least 30 minutes.

2. Roll out the dough to a thickness of 1.5 - 2 cm, cut out the pastries (circles), brush with egg, and sprinkle with grated cheese or caraway seeds.

3. Bake at 175 °C for about 20 - 25 minutes until golden.

TIP FROM KAROTKA: Serve the pastries as a side dish to a cheese platter with favorite SABI cheeses Volovec, Čergov, or Hrudka, complemented with boiled eggs, horseradish, beetroot, and salami. The Easter version is enhanced with smoked meats, cooked ham, and sausage.
