200 g sultanas
200 g dried cranberries
200 g dried apricots
200 g raisins
250 g oat flakes ground into flour
200 g almond flour / ground almonds
12 g baking powder
4 pcs eggs
250 g SABI butter
4 pcs oranges
9 g dried orange peel
90 g walnuts (for decoration)
Procedure
Chop dried apricots into small pieces and add the remaining dried fruit. Grind oat flakes into flour and mix with almond flour. Mix the flour with the dried fruit. Add baking powder, orange peel, melted SABI butter, and eggs.
Juice the oranges in a separate bowl. Gradually pour the juice into the mixture while stirring until a medium-thick batter forms. The amount of juice depends on the oranges, so have extra on hand just in case. Pour the batter into a cake pan (26 cm diameter) lined with baking paper and greased on the sides with butter. Sprinkle walnuts on top of the cake.
Bake until golden, about 60 to 70 minutes at 180°C.
TIP: You can decorate with a "snowy" glaze.
