Bryndza from pasteurized milk contains several types of lactic acid bacteria added to heat-treated milk. In stores, you will find it as thermized bryndza.
According to the food code, bryndza should contain at least 50% sheep cheese. True traditional bryndza should therefore contain small grains of sheep cheese.
