Broccoli Casserole with Couscous

250 g couscous
1 teaspoon curry powder
3 tablespoons olive oil
1 onion
2 garlic cloves
500 g broccoli
2 carrots
parsley leaves
100 g matured Volovec cheese
200 ml 33% whipping cream SABI
2 eggs
butter SABI
salt
ground black pepper  


Procedure

Mix couscous with curry powder in a bowl. Add olive oil and salt. Pour boiling water over, cover, and let swell for 5 minutes.
Finely chop onion and garlic, sauté in oil, and add to couscous. Break broccoli into small florets, peel and dice carrots. Blanch vegetables in boiling water, cool, drain, and add to couscous.
Finally, add chopped parsley, grated cheese, and mix. Season with salt and pepper as needed.

Grease the bottom of a baking dish with butter and place the broccoli mixture inside. Mix cream with eggs and salt and pour over the mixture in the baking dish. Bake in a preheated oven at 180 °C for about 35 minutes.
