For the first sponge:
4 eggs
4 tablespoons plain flour
4 tablespoons sugar
a pinch of baking powder
For the second sponge:
4 eggs
4 tablespoons plain flour
4 tablespoons sugar
a pinch of baking powder
2 tablespoons cocoa
baking paper
For the cream:
250g powdered sugar
250g butter
300ml semi-skimmed milk
50g plain flour
at least 3 bananas sliced into rounds
For decoration:
2 pcs whipping cream 33% (200ml)
grated chocolate
1 whipping stabilizer
Procedure
Whisk egg yolks with sugar until foamy. Add sifted flour mixed with baking powder. Finally, gently fold in the egg whites. Bake the sponge in an oven preheated to 180°C. Prepare the second sponge similarly but add cocoa.
Cook the cream from milk and flour. Let cool. Mix butter with sugar until smooth. Gradually mix in the cooled cream from flour and milk. Chill the cream briefly to thicken.
On a tray (or baking sheet), place the white sponge at the bottom, spread half the cream, arrange banana slices on the cream, cover with the remaining cream. Cover with the dark sponge and spread whipped cream stabilized with the whipping stabilizer on top. Chill well. Before serving, sprinkle the top with grated chocolate.
