Family White Sauerkraut Soup

Ingredients

800 g sauerkraut
40 g dried mushrooms
4 pcs bay leaves
200 ml SABI sour cream
salt, black pepper
150 ml SABI whipping cream

Roux

2 tbsp SABI butter
1 and 1/2 tbsp plain flour

Procedure

1. Soak the mushrooms in warm water and let them rest for 15 minutes. Then drain the mushroom water and put it together with the sauerkraut into a large pot.

2. Cover the sauerkraut and mushrooms with water, add salt, pepper, bay leaves, and let it cook until soft, about 50 minutes.

3. Heat SABI butter in a pan, add white flour, and lightly roast. Pour the roux with water from the sauerkraut through a sieve (to avoid lumps) into the soup.

4. Finally, add sour cream and whipping cream to the soup. Let it boil, season with salt and pepper, and serve.

TIP FROM KAROTKA: You can add dried plums to the sauerkraut soup besides mushrooms.
