Pavlova Hearts

Ingredients

PAVLOVA

5 pcs egg whites
250 g granulated sugar
2 and 1/2 tsp corn starch
1 tsp white vinegar

CREAM

250 ml SABI whipping cream
250 g smooth SABI curd cheese
1 - 2 packs vanilla sugar
berry fruit for decoration

Procedure

1. Preheat the oven to 150 °C.

2. Separate yolks from whites and whip the whites at high speed for 1 minute. Then, while continuing to whip, gradually add sugar to the whites one tablespoon at a time. Continue whipping for about 8 minutes until the mixture is thick, glossy, and free of sugar crystals.

3. Add vinegar and corn starch to the whipped whites and whip a little longer.

4. Transfer the mixture to a piping bag and shape hearts from the egg white mixture on a baking tray lined with parchment paper.

5. Using a spoon, gently "flatten" them and create a depression in the center. Place the tray in the oven, immediately reduce the temperature to 110 ºC, and bake for 1 hour and 30 minutes.

6. Turn off the oven and let the pavlovas cool completely in the closed oven for 4 hours (ideally overnight).

7. Whip the cream, add vanilla sugar and curd cheese, and mix. Fill the cooled pavlovas with whipped cream filling, decorate with fruit, and enjoy.

TIP FROM KAROTKA: Fill pavlovas with whipped cream and fruit just before serving to keep them beautifully crispy on the outside and soft inside.
