Lumpy SABI curd cheese is made by sour coagulation of cow's milk using lactic and probiotic bacteria. Smooth SABI curd cheese is made similarly but undergoes additional enzymatic coagulation using rennet. Smooth SABI curd cheese is also delactosed, making it easier to digest. Since delactosing produces easily digestible monosaccharides, lactose-free SABI curd cheese is more than suitable for all consumers (yes, even those without lactose intolerance – your body digests it better).
