1 kg boiled potatoes in skin
300 g coarse wholemeal flour
1 egg
500 g bryndza cheese
salt
ground black pepper
white yogurt SABI
SABI butter
2 onions
Procedure
Boil potatoes in skin, peel, and mash most of them. Add salt, flour, egg, and knead a non-sticky dough. Prepare filling from remaining potatoes mixed with bryndza and season. Roll dough thinly on a floured board. Cut dumplings with a round cutter, fill the center with bryndza filling, and seal edges with a fork. Boil in salted water. Serve with white yogurt, onions fried in butter, and optionally sprinkle with fresh parsley.
