1 kg boiled potatoes in skin
300 g coarse whole grain flour
1 egg
500 g bryndza cheese
salt
ground black pepper
white yogurt SABI
SABI butter
2 onions
Procedure
Boil potatoes in skin, peel and mash most of them. Add salt, flour, egg and knead non-sticky dough.
Prepare filling from remaining potatoes mixed with bryndza and seasoning. Roll dough thin on floured surface. Cut dumplings with a round cutter, fill center with bryndza filling, and seal edges with a fork. Boil in salted boiling water.
Serve with white yogurt, butter-fried onions, and optionally sprinkle with fresh parsley.
Our TIP: Dumplings can also be fried or baked in the oven. Each method gives a unique flavor.
