Mashed Potatoes with Barley and Onions

700 – 800 g potatoes
300 ml semi-skimmed milk SABI
150 g pearl barley
3 garlic cloves
salt
marjoram
parsley leaves
1 – 2 onions
oil


Procedure

Rinse barley. Roast barley in a pot with a little oil and salt, then add water and cook until soft. Peel and cook potatoes in salted water. Drain water and mash potatoes with hot milk. Mix in barley, garlic, marjoram, and parsley leaves to taste. Fry finely chopped onion in a pan and mix half into the mash. Before serving, garnish with remaining fried onion or bacon potato chips.


Our tip: Bacon potato chips – fry thin slices of bacon or prosciutto until crispy, drain on paper towel, and garnish the dish.
