Braided Apple Strudel

Ingredients

Starter:

100 ml water
1 tsp honey
130 g plain flour
20 g yeast

Filling:

1 kg apples

Remaining dough:

80 ml water
1 egg
100 g granulated sugar
100 g butter
20 g dried milk
330 g plain flour
pinch of salt


Instructions

  1. Mix starter ingredients and let rise for 45 - 60 minutes.
  2. Peel, coarsely grate apples, and stew. Sweeten to taste; optionally add raisins or nuts. Let cool.
  3. Add remaining ingredients to the starter and knead dough. Let rise for 45 - 60 minutes.
  4. Divide risen dough into two parts. Roll into round (or oval) shapes. Spread apples in the center, pressing out excess juice. Cut dough edges into strips and braid over the apples.
  5. Brush with egg and bake until golden.

Note: The dough is very delicate and a bit tricky to work with at first, but the divine taste is worth it.
