250 g smoked salmon
300 g fresh spinach leaves
3 eggs
a pinch of nutmeg
some chopped dill
250 g SABINA cream cheese
lime
salt
ground black pepper
Procedure
Wash the spinach leaves and dry them with a paper towel. Pour water over them and cook briefly, then drain.
Separate the egg whites from the yolks. Mix the spinach with the yolks, a pinch of nutmeg, salt, and pepper. Blend in a mixer or food processor. Whip the egg whites and gently fold them into the spinach mixture.
Preheat the oven to 190 °C. Line a baking tray with parchment paper and brush it with olive oil. Spread the spinach mixture evenly on the paper. Bake for 15 minutes and then let it cool completely.
Chop the dill finely, mix it with the juice of half a lime, cream cheese, salt, and pepper.
Spread the cheese mixture evenly over the spinach sponge and arrange the salmon on top. Roll up and wrap in aluminum foil. Let it rest in the refrigerator until the next day.
