Salad with Pumpkin and SABI Yogurt Tartar Sauce

1 SABI Yogurt Tartar Sauce
200 g quinoa
300 g pumpkin (e.g., hokkaido or butter pumpkin)
1 pc ripe avocado
100 g kale (young leaves or baby kale)
1 pc small red onion
a handful cherry tomatoes
olive oil
juice of 1 lemon
salt, black pepper
pumpkin seeds
fresh herbs


Instructions

1. Cook the quinoa according to instructions and let cool.

2. Cut the pumpkin into cubes, season with salt and pepper, and roast in the oven until soft (or boil in salted water).

3. Dice the onion, tomatoes, and avocado.

4. Tear the kale leaves, drizzle with lemon juice, and lightly mix.

5. Mix quinoa, pumpkin, vegetables, and kale together, season with olive oil, lemon, salt, and pepper.

6. Sprinkle with pumpkin seeds or herbs and serve with SABI Yogurt Tartar Sauce.
