Spring Curd Cake

3 pcs eggs
120 g granulated sugar
200 ml SABI milk
60 ml sunflower oil
300 g semi-coarse flour
1 pc baking powder
2 tbsp cocoa
250 g lumpy SABI curd cheese
250 g soft spreadable SABI curd cheese
1 pack vanilla pudding
40 g vanilla sugar

Procedure

1. Dark batter: whip whole eggs with sugar until foamy, add milk and oil. Sift flour, baking powder, and cocoa into the mixture. Stir with a spoon until smooth batter forms.

2. Light batter: blend lumpy and soft curd cheese together with a hand blender, add eggs, pudding, and vanilla sugar.

3. In a greased and floured bundt pan, layer alternately the cocoa and vanilla batters. Bake in a preheated oven at 200°C for about 20 minutes, then reduce temperature to 160°C and bake for another 40 minutes.
