Strawberry-Chocolate SABI Cake

BASE:
3 pcs eggs
150 g granulated sugar
1 pc vanilla sugar
150 ml oil
150 ml mineral water
45 g cocoa
150 g plain flour
1/2 tbsp baking powder

STRAWBERRY LAYER:
250 g strawberries (frozen/fresh)
1 pc vanilla pudding + 100 ml water
4 tbsp strawberry syrup
50 ml water

CREAM:
250 g mascarpone
200 ml SABI whipping cream 33%
200 ml SABI sour cream
50 g powdered sugar
4 tbsp cocoa


Procedure

1. Whip eggs with vanilla and granulated sugar for about 5 minutes. Add oil and mineral water, then manually fold in sifted flour, baking powder, and cocoa.

2. Pour the batter into a round pan (27 cm) lined with baking paper and bake in a preheated oven at 180°C for 25 to 30 minutes.

3. In a pot, add chopped strawberries, syrup, and water and cook. When the mixture boils, add pudding mixed in 100 ml water. Stir until thickened, let cool slightly, and pour over the baked base.

4. Mix mascarpone, SABI whipping cream, SABI sour cream, and powdered sugar and whip briefly. Finally, add sifted cocoa and gently fold it in to avoid overwhipping the cream.

5. Spread the cream on the cooled cake, smooth it out, and decorate with strawberries or chocolate shavings. Let it rest overnight in the refrigerator before serving.
