And why is this cheese so tasty?
"Our production constantly strives to make products that are quality but especially tasty! That is why we decided to further improve the already perfect Volovec cheese. We produce premium Volovec cheese with spices thanks to a special recipe modification, which includes extending the ripening time and adding spices during production," said Ing. Peter Kočiš, head of production.
This Tilsit cheese, Swiss-type, is made by so-called sweet coagulation of milk by natural rennet, during which we also add a mixture of black and green pepper. To achieve the typical taste of premium Volovec cheese, long-term ripening is necessary. Ripening occurs thanks to a mixture of dairy cultures, including the probiotic culture Lactobacillus helveticus, and at regular intervals, a surface culture (Brevibacterium linens) specific to this cheese type is applied. Premium Volovec cheese (whether plain or with spices) then ripens for up to 6 months from the rind inward. Ripening takes place under optimal conditions in special warehouses under strict control.
This long ripening enhances its typical mildly spicy yet sweetish taste and aroma. The great thing is that due to long ripening, it is suitable even for consumers who suffer from lactose intolerance. Volovec Premium is suitable for every home kitchen, and gourmets also appreciate it. Thanks to its taste and aromatic properties, it is an excellent addition to both cold and hot cuisine.
