Volovec Premium

 

For the month of December, we have selected this Premium Volovec in two variants as the tip of the month for you. 

 

Tilsit-type cheese, made according to Swiss recipe, our company started producing in 2009. Originally Prussian (current territory of Lithuania) recipe was used in the town of Tilsit, from where it spread throughout Europe.

 

 

While regular Volovec cheese matures for about 3 months, Volovec Premium matures for at least 6 months, with the process that after 3 months a selection is made from the regular batch and the cheeses are further treated for at least another three months. 


It matures from the surface to the center, i.e., "under the smear". Its characteristic, mildly spicy taste, obtained by regularly applying a mixture of bacterial cultures, is complemented in one variant with spices.
 

The product awarded first place in competitions, National Cheese Exhibition Prague 2016 and Czechoslovak Cheese Fair 2016, is best enjoyed with sweeter muscat grapes and Sauvignon wine.
