“MILK-AGRO produces VOLOVEC cheese according to a traditional recipe, without added preservatives and sweeteners. It is a cheese with low-heated curd. Its peculiarity is the ripening process itself. Thanks to the application of a mixture of bacterial cultures (Brevitabacterium linens) at regular intervals on the cheese surface, the ripening progresses from the rind towards the center. This also leads to the gradual enhancement of its typical mildly spicy aroma,” said the production manager, Mr. Ing. Peter Kočiš.
TYPES OF VOLOVEC CHEESE
In our stores, you can find several variations of Volovec cheese. The difference lies in the weight or the length of ripening. VOLOVEC Cut is sold in protective packaging with a weight from 180 to 250 g. Volovec Slices are portioned into thin slices. It is the same taste experience; the difference is only in the portioning.
Regarding the PREMIUM cheese version, it is VOLOVEC cheese whose taste is enhanced by even longer ripening with a spicier taste and even more aromatic aroma. Volovec Premium is a premium type of Volovec that ripens in ripening warehouses for at least 6 months, which is a longer ripening period than classic Volovec.
We also offer Volovec in processed form as VOLOVEC sausage. It is a processed Tilsit-type cheese made by a special melting process while preserving our company’s traditional recipes. It is a spreadable cheese of creamy color, characteristic taste, and aroma typical for Volovec cheeses.
