We asked Ing. Ladislav Juhasz, head of the cheese dairy at Milk-Agro, about the special limited edition cheese Volovec Premium.
How does Volovec Premium cheese differ from the year-round available Volovec cheese?
Volovec is an excellent cheese that wins awards wherever we enter it. At Kozí vršok, we won first place twice. There, the cheese was evaluated by visiting guests. Then, in Nitra, they organized the Cheese Valibuk competition one year, where the quality and taste of the cheese were judged by an expert jury, and we also won first place. Twice we submitted the cheese for evaluation in Prague as well. The Czech Dairy Association organizes regular evaluations of Czech cheeses, and they also evaluate foreign cheeses. The chairman of the dairy association hinted to me that Volovec was the best among all the cheeses evaluated, and there were over 60 of them. There, the cheese is judged by an expert jury, and the overall placement is determined by how many jury members vote for a particular cheese as the best.
And in the evaluation of our Volovec cheese, the voting was unanimous. All 32 jury members voted that Volovec cheese is the best. This happened at the National Cheese Exhibition in Prague this year.
Such an evaluation surely pleases the master who oversees the production of this precious cheese.
Yes, it pleases me, but I am not happy that this quality cheese is still little known in Slovakia. But let me return to the first question. Volovec matures for three months. After 3 months of maturation, we select batches that are expected to improve in quality during longer maturation (at least another 3 months).
The result is a cheese of excellent quality with a higher dry matter content, an unmistakable aroma, and excellent taste properties.
